pumpkin spice cheesecake blossoms


Pumpkin Spice Cheesecake Blossoms

Ingredients

  • 1 cup butter, still cold
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 1/2 cups flour
  • 1/2 cup cinnamon sugar (1/2 cup sugar + 1 tsp cinnamon)
  • 3.4 ounce cheesecake flavor pudding mix
  • pumpkin spice Hershey kisses (about 4 dozen)

Method

  1. Preheat oven to 350
  2. Mix together butter, brown sugar and granulated sugar until smooth
  3. Beat in eggs until creamy
  4. Mix in vanilla, salt and baking soda
  5. Mix in flour, and pudding mix until dough forms and chill for 10 minutes
  6. Scoop about a tablespoon of dough and roll into ball
  7. Roll each ball in cinnamon sugar mixture to coat
  8. Place on cookie sheet about 2 inches apart and bake for 9 minutes
  9. Press a Hershey Kiss on top of each cookie immediately after removing from oven and cool

*tip - Ensure your butter is still cold, so you can form a good dough ball.  If it's not good and cold, chill dough for 1/2 hour before.

*tip - I found that these kisses melted quicker than regular chocolate kisses, so I put them in the freezer for a bit before pressing in the cookies.  Skip this if you're ok with them melting...they are still delicious :)

Ok.  I made these over the weekend and wow, just wow!!  The cheesecake pudding makes the cookie really moist and then topped off by a soft, gooey pumpkin spice kiss it's well...perfect :)  Save it for your next special occasion or make them just because :)  They are scrumptious!

Halloween Recap

 




Good Monday morning!  Hope you had a lovely weekend!  Love the extra hour we got this weekend!  You?  Are you feeling refreshed? 
 
Just popping in today to share a few pictures from our Halloween.  Lyla was sweet Alice and Preston is all about scary costumes now, so according to the costume package, he's an unknown phantom with fading in and out red glowing eyes ??  As long as he doesn't pick anything too gory, I've thrown in the towel and let him be what he wants to be :)  We had pouring down rain the whole day before Halloween and up until 3pm Halloween day, so we were very lucky to get a break in the rain to go trick or treating. 
 
And you might noticed that my header is different.  Not sure if it's staying.  I started tweaking things on Saturday and was having major issues with my header.  So I left it as it is for the weekend and I'm hoping to mess with it today a bit.  Might be time to get a blog designer?  Do you have anyone you like?

october highlights {top five}

Happy Friday and Hello November!  Oh my word, I ate so many banana laffy taffies and peanut butter snickers last night it put me in a sugar coma!  I have no control when it comes to sweets.  My mission today is to get the candy outta here!  We went trick or treating with our friends and had a great evening watching the kids run door to door through the neighborhood trying to collect as much candy as possible, while we followed behind enjoying our Halloween beverages :) and catching up with our friends.  Hope your Halloween festivities were fun filled!
