There's no doubt that I love Mexican food! My kids love it too and it's usually their first pick when we are discussing which restaurant we want to eat at. I wonder if it's because they bring you food right away...chips and salsa the minute you sit down...so, so good :)
Mexican food is a regular for our home dinner time meals too. Over the years, I've modified our taco recipe a bit and I love these lettuce wrap, ground turkey tacos. Cutting out the tortillas and substituting the ground beef for ground turkey make this version a little bit healthier.
Lettuce Wrap Tacos
Ingredients
1 pound of lean ground turkey
1 packet of taco seasoning
1 head of iceberg lettuce (or lettuce of your choice)
Method
Season ground turkey with salt and pepper and then brown until cooked.
Add taco seasoning and 3/4 cup of water.
Simmer for a few minutes.
Wash and prepare lettuce.
Place meat mixture on top of lettuce.
Add toppings of your choice, depending on how healthy you choose to make these (here are some we like):
- pico de gallo (premade or chopped tomatoes, onion, serrano peppers, cilantro, lime juice)
- shredded Mexican cheese
- guacamole
- sour cream
- refried, black or charro beans
- Spanish rice
A great easy, quick meal for our busy week nights!
