Happy Thanksgiving Week! It seems a little odd saying that as I feel it has really come up quickly. For you too? Speaking of odd, we actually got our Christmas tree put up yesterday - yikes! I don't usually do any Christmas decorating until after Thanksgiving, but we'll be out of town for Thanksgiving and we have to make an unexpected trip to Dallas, so we went ahead and pulled it out. But it sure was nice sitting by it's glow last night with a warm fire. Loved it!! But really looking forward to celebrating Thanksgiving before I fully embrace Christmas.
Now on to my post topic...do you have a quick, easy recipe that you use frequently? Today I thought I would share my go to cookie with you. Not only is this cookie super easy to make with only 3 ingredients and no baking, but it's really yummy too. And the main reason I make this cookie a lot is that I almost always have two of three ingredients on hand. My kids eat PB&J sandwiches about three times a week, so I always have peanut butter. And crackers are a regular in my pantry as well. So usually the only ingredient I need to pick up is the chocolate bark. If I need to bring a refreshment/dessert type food and I'm short on time, this is my fall back cookie. They would also be perfect for a cookie exchange!
Chocolate Covered Ritz Peanut Butter Cookies
Ingredients
- Ritz crackers
- Creamy Peanut Butter
- Chocolate Bark
- Spread peanut butter between two crackers and sandwich together
- Melt chocolate bark as directed
- Dip the whole cracker with peanut butter in chocolate and fully coat
- Removed from chocolate and place on wax paper to cool
So simple, so good.
