turkey & strawberry pasta salad


 
Ingredients
 
6 ounces rotini pasta
1 medium apple, cored and cut into thin slices
1 tablespoon lime or lemon juice
1/2 pound smoked turkey breast, cut into bite-size pieces
1 cup fresh strawberries, quartered
1/2 cup celery, sliced
1/4 cup fat-free, plain yogurt
2 tablespoons mayonnaise or salad dressing
2 tablespoons skim milk
4 teaspoons Dijon-style mustard
1/4 teaspoon celery seed
 
Method
 
Prepare pasta as directed on the package.  Rinse with cold water and drain.
Toss apple slices with lemon juice to coat.
Combine the cooked pasta, apple, turkey, strawberries and celery in a bowl.
Mix yogurt, mayonnaise (or salad dressing), milk, mustard and celery seed in a small bowl.
Pour the dressing over the salad and toss gently to coat.



 
 
I was digging through my recipes over the weekend and came across this pasta which had an interesting mix of ingredients.  Striving to eat healthier meals and the fact that I had almost every ingredient, I threw it together and was pleased with the results!  It's a delightful mix of flavors and textures.  Loved all the pretty colors together as well :)

  1. Sounds yummy! How was the dressing? Did those flavors blend well with the sweetness of the strawberries and apples?

    1. When I first mixed up the dressing I was worried that the mustard would be too strong, but once it was on the salad it was delicious. The sweet strawberries and apples with the mustard was yummy. My husband even took it to lunch the next day. I laughed because I thought it was kind of a girlie salad. Ha!
